  2. Chop the 2 cloves of garlic and the peppers (previously washed) into very small pieces. We heat the oil and, when it is ready, we add the garlic. When the garlic has sautéed for a couple of minutes, add the chopped pepper and let it cook over low heat for 8 minutes.
  3. We introduce the cooked corn and whole olives. We mix with the sauce. We taste and if necessary we add salt and pepper.
  4. After this time, we add the rice so that it is sautéed with the sauce and takes on flavor. We stir it from time to time for a minute. Next we add the fish broth or water, the white wine and a pinch of turmeric or yellow food coloring (just a dot, and optionally, just to give it a little color).
  5. We let the rice cook over low heat for 15 minutes, stirring from time to time so that it does not stick.
  6. When 10 minutes have passed since the rice has cooked, we add the tuna that we reserved at the beginning and the two eggs (cut into small pieces), stirring everything well so that it is mixed. We taste the salt (it shouldn’t be necessary, since tuna provides salt) and if necessary we rectify it. We let the rice cook for the remaining 5 minutes.
  7. After 15 minutes of cooking, we remove it from the heat and serve it on plates to each person’s taste. Ready to eat.
