Before you start cooking. Cooking the eggs

  1. Let’s cook the eggs . We cover them with cold water and cook for 12 minutes from boiling.
  2. We should not cook them longer as a dark greenish halo forms around the yolk that is unpleasant to look at.
  3. Nor should we let the eggs sit in the water in which we cooked them. We must immediately pour cold water so that they temper and do not continue cooking. With these instructions they have to be perfect. We reserve for the end of the rice.

Preparation of sticky rice with tuna

  1. First we pour the oil from the 3 cans of crumbed tuna into a frying pan, reserving the fish for later. It is a pack of canned tuna (buy the brand you like, but in olive oil) that I have used and is 120 grams, drained the 3 cans. It is always better to remove the oil well (for example with a strainer) to use it in the sauce.
  2. Chop the 2 cloves of garlic and the peppers (previously washed) into very small pieces. We heat the oil and, when it is ready, we add the garlic. When the garlic has sautéed for a couple of minutes, add the chopped pepper and let it cook over low heat for 8 minutes.
  3. We introduce the cooked corn and whole olives. We mix with the sauce. We taste and if necessary we add salt and pepper.
  4. After this time, we add the rice so that it is sautéed with the sauce and takes on flavor. We stir it from time to time for a minute. Next we add the fish broth or water, the white wine and a pinch of turmeric or yellow food coloring (just a dot, and optionally, just to give it a little color).
  5. We let the rice cook over low heat for 15 minutes, stirring from time to time so that it does not stick.
  6. When 10 minutes have passed since the rice has cooked, we add the tuna that we reserved at the beginning and the two eggs (cut into small pieces), stirring everything well so that it is mixed. We taste the salt (it shouldn’t be necessary, since tuna provides salt) and if necessary we rectify it. We let the rice cook for the remaining 5 minutes.
  7. After 15 minutes of cooking, we remove it from the heat and serve it on plates to each person’s taste. Ready to eat.

Tips for a perfect sticky rice with tuna

  • If we use a good homemade broth , the result will be spectacular. If not, it is best to buy the brand that best suits us.
  • It is a sticky rice, so we should have a moist final result . We can make it drier if we eliminate some of the broth or let it cook longer.
  • It is best to use tuna in olive oil . That will give the dish a special touch.
