Squid with onions are one of those dishes that take me back to childhood, since they have always been eaten often at home.

I think there was not a week without them falling into daily meals, that’s why I love making them, even if it’s not so repetitive in my case. But you already know what it’s like to have a recipe blog, that we rarely repeat dishes because we have to provide variety to the already existing repertoire.

If you have never eaten squid with onions, I can only tell you that you are already taking a while. It is a delicious, economical, easy to prepare and very nutritious dish . The most annoying part of the whole process is cleaning the squid, but we do have a friendly fishmonger who will surely manage to leave these little animals very clean. Of course, this is one of the many ways to cook squid. Not nearly as popular as the squid in its ink that is so popular throughout the country, but they are no less delicious. It is a traditional recipe of our gastronomy in which the squid shines with its own light and the onion only reinforces and nuances its flavor.

Preparation of the squid with onions

  1. We peel the onion and cut it in half. Then, with the flat side down, we cut each half into thin strips or julienne strips.
  2. We wash the red pepper and cut it in half. We clean one of them well of seeds and peduncle and reserve the other half for another preparation. We cut it into thin strips. On the other hand, we peel the garlic clove and chop it finely or pass it through a garlic press.
  3. In a large saucepan, heat a little oil and sauté the onion along with the red pepper and garlic over low heat. Meanwhile we clean the squid, separating the body from the tentacles, pulling gently. We verify that there are no remains inside the bodies. If this is not the case, we empty them well, remove the skins and wash them well under a splash of cold water.
  4. Now we go with the tentacles from which we have to remove the heads that are useless. With scissors or a very sharp knife, we cut below the head and are left with only the tentacles. We discard the heads, although we can save the ink bags that we find among the viscera and freeze them for other preparations.
  5. We add the squid, well drained, to the casserole along with the paprika, stir and pour over with the white wine. Season and let cook over low heat, with the pot covered, for 40 minutes or until tender.

Tips for some delicious squid

  • I like to cook squid whole, especially because when they are cooked their size reduces considerably. However, if you prefer to cut them into pieces, go ahead with it. Keep in mind that the smaller the pieces of squid, the less cooking time they will need, so adjust the recipe accordingly so that they do not end up dry and hard.
  • It is important that the squid are very clean and that we eliminate the remains inside the bodies (in which we often find small fish), removing any possible grit they may contain.
  • The addition of red pepper is free choice . We like it because it gives it an interesting sweet touch, but if you don’t like it you can do without it completely. On the contrary, if you like pepper, you can add more or even mix it with green and/or yellow pepper.
  • For the squid with onions to be tender and at their cooking point, they must be rather dry , with almost no sauce. That is why it is important that the squid is very well drained when adding it to the casserole, so that it does not release too much liquid and overcooking makes it hard.
  • In any case, if the squid are too watery, we can add a little breadcrumbs to dry them out and get a slightly thick sauce.
  • Finally, we can accompany these squid with onions with boiled rice, which is an excellent garnish, with grilled vegetables or with a fresh green leaf salad.
