  • 300 g of La Fallera bomb rice
  • 900 ml. of fish broth or fumet (water would also work)
  • 1 medium onion
  • ½ red pepper, ½ green pepper and ½ yellow pepper
  • 1 tomato
  • 300 g rice shrimp
  • 7 strands of saffron
  • 400 g squid
  • 1 head of garlic (for decoration and flavor)
  • Salt (to the taste of each house)
  • 100 ml. extra virgin olive oil
  • 40 cm paella.

With the arrival of good weather, there is nothing like rice to enjoy with friends and family. The rice dishes are the best. In themselves they have a large number of properties , they are a spectacular source of energy, they prevent cancer, they are a digestive balm, good for the heart… In short, there is nothing like good rice to improve your life.

But the best thing is that we can prepare them in a thousand different ways. If one day we want that traditional rice, nothing like a delicious Valencian paella . What do we feel like an exotic dish? We can opt for Indian-style rice or the always delicious oriental-style fried rice . Not to mention that delicious white rice can accompany any dish, like in this recipe for chicken tikka masala with basmati rice .

Today we expand our variety of rice a little more and present you this delicious rice with shrimp and squid prepared in paella, but as in many recipes, it is not Valencian paella, it is only prepared in this utensil. This is one of those rice dishes worthy of a restaurant, which we can taste in many beach bars. We can’t take the beach to wherever you are, but surely with this recipe you will at least get memories of the sea.

The recipe is not difficult to make , although it does take a little time to prepare. You already know the saying: “Good things take a long time to wait.” Well, with this delicious rice with shrimp and squid we assure you that the wait will be worth it, because it is delicious .

Before starting with the shrimp and squid paella

  1. It is essential to have the paella ready and, if possible, with several uses (it helps the rice not to stick). The size is important, allowing the rice to cook evenly over its entire surface.
  2. In this case we have prepared it on an induction hob, and our paella is for this type of fire, although it is also valid for fire and ceramic hobs. My advice, if you have the possibility, is to use a good gas burner or temperature diffuser so that it reaches the entire surface of the paella.
  3. And if you are a pro paella cook, of course with fire. In this case it is rice for 4 or 5 people, so the diameter of the paella is 40 centimeters (perfect for my induction hob), if you are going to make it for more people, you have to increase the size of the paella .

Preparation of fried rice. Vegetables, squid and shrimp

  1. First we chop the onion very finely with half the red, green and yellow pepper. We wash the tomato, peel it and grate it. In a paella, we add everything together with the saffron with a splash of extra virgin olive oil and sauté over low heat for 15 minutes.
  2. While the sauce is cooking, we clean the squid, separating the body from the tentacles, pulling gently. We verify that there are no remains inside the bodies. If this is not the case, we empty them well, remove the skins and wash them well under a splash of cold water.
  3. Now we go with the tentacles from which we have to remove the heads that are useless. With scissors or a very sharp knife, we cut below the head and are left with only the tentacles. We discard the heads, although we can save the ink bags that we find among the viscera and freeze them for other preparations.
  4. We cut the squid into three pieces that we reserve for later. Then we peel the shrimp and remove their heads. We save the shrimp for later and with the heads and bodies of the shrimp we make a broth by cooking them in one and a half liters of water for 15 minutes. We reserve.

Preparation of rice with shrimp and squid

  1. When the sauce is ready, sauté the rice and add the squid, and stir everything well until the rice takes on a pearly color. As soon as the rice has taken on the color, we add the hot broth that we have prepared by first removing the heads and skins of the prawns, and we cook everything over high heat for 8 minutes.
  2. After these 8 minutes, we lower the heat to minimum and let it cook for another 8 minutes. When 6 minutes of this second cooking have passed, we add the prawns so that they cook with the rest of the rice. We put the head of garlic in the middle of the rice.
  3. When those 8 minutes of step 2 have passed, we check if the rice is well cooked, taste and adjust the salt if necessary. If you like it to be very dry, we can give it a touch of oven, no more than 2 minutes.
  4. We remove the pan from the heat and cover it with a kitchen towel for 5 minutes. We decorate with some lemon slices and ready to serve.

Tips for perfect rice with shrimp and squid

  • If we do not have time to make the homemade broth, we can use fish broth that is bought in the supermarket.
  • Ideally, shrimp and squid should be fresh to give more flavor, but they can be used frozen without a problem.
  • If the rice seems cooked, but there is still a lot of broth left, we increase the heat to maximum so that the broth evaporates as quickly as possible.
  • The thinner the layer of rice, the better the paella will be, but on the contrary, a paella with a lot of rice will be mediocre. Of course, we will need a larger and larger paella to get the same portions.
