Rice flour is  a very light  type of flour   that is mainly used for  batters and thickening sauces  and stews. It is very common in Japan, where they use it to make  tempura recipes  and also rice noodles. Additionally, rice flour  is gluten-free .

Although wheat flour is the most used, possibly due to sociocultural factors in addition to its ease of growing the cereal, there are many other types of flour , such as spelled flour , chickpea flour … or rice flour, which is what Today we are concerned.

Specifically, this flour is very different from wheat flour. Although it contains 90% starch, its granules are very small compared to other flours, so it is fabulous for thickening sauces or creams, such as our gluten-free pastry cream .

I have also seen good results with this ingredient in baking and some pastry recipes. If we are going to use it in desserts or consistent dishes, it is better to mix it with other flours.

How to make rice flour ?

You only need 3 minutes to prepare it. Of course, you need a food processor or a coffee grinder for 2 minutes. To make the flour, the first thing is to remove the husk from the rice. Although to do it at home, we only need to choose the variety of rice that we are going to use and grind it until we obtain rice powder or rice flour.

In this recipe, we have used long white rice , but you can use brown rice, long rice or parboiled rice, whichever you like best.

  1. Its preparation is very simple. It is enough to choose the type of rice that we are going to use, we can even mix several kinds. We grind the beans in a coffee grinder, in an American glass or even a conventional grinder.
  2. We sift the grains to select only the finest ones.

Once made, it is best to store our flour in an airtight container that prevents air, moisture and insects from entering. Store your flour in a cool, dry place.

If you don’t have a good food processor or coffee grinder. You have another option, let the rice soak to soften it and when it has dried, do it even with a basic crusher or with little patience. We will also manage not to burn out the motor of your grinder (if it is not very good).

In this case I recommend using brown rice, because its structure is much better than other varieties of already treated rice.

  1. In a container we put 300 grams of rice and 600 ml. of warm water. We let it sit for 6 hours and then we just have to strain it and rinse. We dried it on a cotton cloth a little, to remove as much moisture as possible.
  2. We place the rice in the grinder and grind for one minute at maximum power. Then we give it a few more passes, about 2 or 3 minutes and you will get a finer flour, not the same as dry flour, but perfect for our recipes.
  3. Finally, we sift it as if it were dry rice. We already have rice flour ready to use, although this flour is to be used at the moment, as it has some moisture it will not last long. If you have leftovers because the recipe requires less quantity, do not throw it away, you can store it in the refrigerator for one or two days without a problem.

Tips for delicious rice flour

  • Rice flour can be used in a lot of recipes, although not all, since it does not have gluten and does not work very well, for example with many desserts. You will see, for example, that some desserts that we consider difficult, such as the roscón de Reyes , can be made with a mixture of flours, where rice is very present. It can also be mixed with other types of flour to make, for example, gluten-free bread .
  • It is not a mathematical rule, but you can substitute wheat flour for rice flour in the following proportions. We will change 150 g. of wheat flour per 130 g. of rice flour, and we will follow this equivalence in proportion. It is a perfect flour for flans, cakes and other desserts that do not require too much consistency.
  • We do not need to wash the rice before grinding it.
  • When grinding, be careful with the motor power, it will not be overloaded.
  • It is not necessary to wash the rice grains, but some people prefer to do so to soften them. If you decide to do it, make sure you dry them very well afterward, otherwise the grains will absorb the water and the flour will remain sticky.
