How to make a rice and minced meat cake

At home we do practical cooking. We have to ensure that our people enjoy food by creating healthy, balanced and, if possible, fun dishes. Imagination is important when getting into the kitchen. Putting some minced meat with rice on your children’s plate is not the same as preparing the recipe that we bring you today, a yummy rice and minced meat cake.

This recipe is a variation on the classic English meat pie . This specific preparation comes from Anglo-Saxon cuisine , where it is called “ Cottage Pie ” (rustic pie). When the meat used for its preparation is beef , then this meat pie is called cottage pie , but when lamb meat is used it is called shepherd’s pie or shepherd’s pie .

Although here we replace the mashed potato topping with a layer of rice enriched with egg. It will also remind us of a lasagna due to its minced meat filling accompanied by sautéed vegetables. As you will see, it is a simple recipe , in which we combine ingredients in a different way that we would have used differently.

This recipe is, nutritionally speaking, balanced and healthy. It contains proteins, vitamins, minerals, fiber and carbohydrates in the same dish. A simple salad would be the perfect accompaniment and sufficient to have a complete, nutritious and balanced meal. The rice , enriched with egg, will give consistency to the recipe. By using round SOS rice , we will ensure an ideal result for this recipe. We will be able to achieve a more uniform and tasty layer than with other types of rice.

Preparation of meat for the pie

  1. We wash and peel the vegetables and cut them into brunoise, into small cubes. In a saucepan we heat a splash of olive oil. Add the chopped vegetables, 1 clove of garlic, carrots, onion and red pepper. Sauté the vegetables until they begin to soften, about 10 minutes.
  2. Add the pork and beef, season with salt and pepper and add the oregano and rosemary. We cook the meats with the vegetables until golden. We reserve the mixture until it cools.

Preparation of rice for the cake

  1. In a saucepan we heat a splash of olive oil. Add 1 whole clove of garlic and lightly brown it for 1 minute. We can use chopped garlic but with whole garlic we have the option of removing it once it contributes its essence to the oil. Add the rice and sauté it for 2 minutes with the garlic oil.
  2. We cover with the broth and cook it for 10 minutes. The rice will be slightly hard. We must leave it like this, since it will finish cooking in the oven when we assemble the cake. We reserve the rice until it cools.

Assembling the rice and minced meat cake

  1. We prepare the rice for assembling the cake. To do this, we place the rice in a bowl and add the previously beaten eggs. We mix well.
  2. We grease a dish the size of the cake. We add half of the rice and mash it well until we get a homogeneous and compact bed.
  3. Sprinkle half of the grated mozzarella cheese and add the meat filling. We crush until it is very compact.
  4. We cover with the rest of the rice, flatten and compact again. Sprinkle with mozzarella cheese. And with the oven preheated to 180º C with heat up and down (without air), we bake the cake on the middle tray for 15-20 minutes.
  5. Remember that each oven is a world, so you must see how the cheese is grilled and the cake is heated inside, you will surely see it after 15 minutes, I leave a margin of 5 minutes just in case. Then, we let it cool a little before serving, so we can cut and serve without it breaking. A luxury dish available to everyone. Take advantage!

Tips for a delicious rice and minced meat cake

  • Place the mold in the lower part of the oven, so the top part will gratin while the bottom part cooks and the result will be spectacular.
  • If you want to add more flavor to the rice, you can add 100 g of butter when it is already cooked. And if you are brave or your children devour everything, we recommend adding 100 ml of liquid cream to the meat filling. It will make it much richer but also heavier.
