  • 1 kg of potatoes to cook
  • 2 medium onions
  • 2 cloves of garlic
  • 1 teaspoon sweet La Vera paprika
  • 1 sachet of ground saffron or about 6 saffron strands
  • 1 liter of vegetable, poultry (chicken) or meat broth
  • 1 bay leaf
  • Extra virgin olive oil
  • Fresh parsley (optional and only for decoration)
  • Salt and freshly ground black pepper (to each household’s taste)

In the traditional recipe book we find a lot of spoon dishes (what we like, listen) and, among all of them, widow potatoes are one of our favorites.

I have always loved them and I remember when, as a child, my mother prepared them to eat. What a party he had at the table. She called them golden potatoes and pretended that a giant wanted to steal them from me because they were made of gold. Over time I have learned that they are called widow potatoes and now I am the one who prepares them at home for mine.

To this day, this austere and economical recipe still seems like a feast to me. It is very easy to prepare, although it is key to give the potatoes the right cooking point. With this controlled and good raw materials we are guaranteed the most total and absolute enjoyment. Get a good potato , ask the fruit seller to give you a good one to cook. And you will see what it is like to put the spoon on the plate, put the potato in your mouth and feel how butter is made inside. !!!Magnificent!!! And, best of all, without having to break the bank for it.

Despite how humble it is, this is a dish that you can prepare for any gathering of friends, because it will surely leave you in a very good place. It takes very little time to prepare and leaves time to receive your guests without any hassle. A delicious plate.

Preparation of widow potatoes

  1. Peel and finely chop the onion. We also peel the garlic cloves.
  2. Heat a good splash of extra virgin olive oil in a saucepan and add the onion. We grate the garlic cloves (or chop them finely) and add them. Sauté over low heat for about ten minutes or until the onion has become translucent.
  3. While the onion and garlic are sautéing, peel the potatoes, wash them and dry them well. We cut them into pieces of a similar size, trying to crack them so that, during cooking, they release their starch and the broth becomes thick.
  4. When the onion is ready, add the potato pieces to the saucepan and stir well so that they are coated with oil on all sides. We sauté for five minutes.
  5. Next we add the ground saffron, the paprika, the bay leaf and the vegetable broth (you can also add flavor with a poultry or meat broth). Season with salt and pepper to taste. Cook the whole thing over low heat for 10-15 minutes, counting from the moment the broth starts to boil.
  6. We check the doneness of the potatoes and, if necessary because they feel hard, we continue cooking until they are tender. We let it rest for a few minutes before serving.

Tips for perfect widow potatoes

  • If we want to thicken this dish, we can mash one or two pieces of potato at the end of cooking and stir so that the resulting puree mixes with the broth.
  • The cooking time for the potatoes is indicative. The size of the pieces and the type of potato you use will be what determines whether they require more or less time than indicated. It is best to prick with a skewer or toothpick from time to time to ensure that you overcook it (something that cannot be fixed).
