Ingredients

  • 1 loaf of bread for torrijas

This recipe for vegan torrijas left me very surprised because I have not noticed any difference with the more traditional torrijas made with eggs and cow’s milk. Instead I have used ground flax seeds and oat milk and the result is spectacular. Freshly made, which is how I like to eat them, they are a delicacy that melts in your mouth. Pure cream.

Preparation of vegan French toast

  1. The first thing to do is grind the flax seeds, in case you haven’t found the ground version. We can use a coffee or spice grinder, but if we don’t have any of them, there is always the mortar to save the day. Once the flax seeds have been ground, it is necessary to pass them through a strainer to remove any remaining shell remains. Neither the grinders nor the mortar are 100% effective when it comes to grinding the seeds well, so with this step we ensure that the result we obtain is perfect.
  2. Now we can mix the ground flax seeds with the water in a small bowl. We let it rest for about 20-25 minutes so that the mixture becomes thick and slightly viscous (it will be reminiscent of a beaten egg), while we continue with the recipe.
  3. We cut the bread into slices of about two centimeters. This is how I like torrijas, very thick, but if you have other tastes, go ahead with it. You can make more or less thick slices.
  4. In a small saucepan we introduce the vegetable drink that we have chosen (I have opted for the oatmeal one, but you can use almond, soy, coconut, etc.) and add a pinch of salt, sugar, vanilla essence and the cinnamon stick
  5. Heat over low heat and, just before it starts to boil, turn off the heat, cover the saucepan and let it infuse for 20-25 minutes. This also tempers the mixture, because it is not advisable to soak the bread while hot (it would break). Once our mixture is infused, we remove the cinnamon stick and add the water with flax. We stir to mix well.

Frying and presentation of vegan torrijas

  1. We place the slices of bread in a deep dish and sprinkle with the previous mixture, distributing them well. The idea is to soak the bread well on both sides, so we can turn it when necessary. When the bread has absorbed all the liquid, we begin to fry the torrijas.
  2. Heat plenty of oil in a large frying pan, neither too hot nor too cold. The ideal temperature is 165-170º C. We take the slices of bread with great care and immerse them in the oil, let them brown on both sides before removing, draining the excess fat, to a plate with sugar and ground cinnamon. . We coat the torrijas hot, so that the sugar and cinnamon adhere well.
  3. We arrange the torrijas on a serving platter and bring to the table immediately. We serve hot, which is how delicious they are.

Tips for perfect vegan French toast

  • The bread that I like the most to prepare French toast is the specific bread for it, because it soaks very well and is very tender and juicy. But if you want you can use old loaf bread and it is better if it is a little dry, that is, from the day before.
  • Ground flax seeds can be found in that format in many stores and herbalists, but if you can’t find them you can always grind them at home with a grinder or in a mortar.
  • So that the torrijas are well covered with the sugar and cinnamon mixture, it is advisable to do it hot.
  • We can also bathe the torrijas in aguamiel, that is, a 50/50 mixture of water and honey that we bring to a quick boil so that the two ingredients mix well. They are delicious and are an alternative to sugar and cinnamon.
