Preparation of scrambled eggs

  1. In a frying pan where the ingredients do not stick (the best is the one you have for the omelet, for some crepes or for the French omelet) we are going to prepare some simple and quick scrambled eggs.

They can be made directly, but if we separate the white from the yolk, we will give it the perfect point since the yolk does not have to be cooked too much so that it comes out with an airy and moist texture. But in my case, we usually do it together, as I said without beating much, just beat until mixed but without foaming the egg.
  3. It is important that the pan is over medium heat so that it cooks perfectly. At very low heat they will take a long time to set and at high heat they run the risk of staying dry.
  4. Pour the eggs into the hot pan and stir constantly with a wooden spoon. We must constantly separate what sticks to the walls and bottom of the pan. When the eggs are still moist, but not completely liquid, we put them together in the center.
  5. We are going to pass through the eggs from the edges towards the center, leaving a few seconds between passes to give them time to set.
  6. We turn off the heat and we will see the egg that is still cooked because the pan is still hot, we remove it to a plate. Season with salt and pepper and add a little finely chopped chives (optional).

Tips for delicious scrambled eggs

  • The better the raw material, the better the final result. If we start with some eggs, quality oil and our advice, I assure you that they will turn out delicious. Here you have the base to make them well, then each one will give it their special touch by completing the dish with other ingredients and seasonings to their liking.
  • They can be made with butter or lard, it adds more flavor to your scrambled eggs but they are less healthy. At home we have become accustomed to making them with extra virgin olive oil, they are delicious and taste delicious. And of course they are healthier.
  • I have seen adding a splash of milk in some restaurants when I have gone on vacation, but I don’t like it, I don’t think it adds anything, on the contrary, they are too creamy with a dairy flavor that masks the flavor of the egg. At least I don’t like it, I’ll leave it to your taste.
