Quesadillas are a typical dish of Mexican cuisine based on cheese that is served melted inside a folded wheat or corn tortilla . There are many versions and the ingredients may vary, depending on the area. Over time and the rise of Mexican restaurants and taquerias, they have become popular and spread to many parts of the world.

We are not trying to make a classic recipe but rather a couple of simple versions , adapted to the ingredients we have around here and that we can prepare quickly and without getting too complicated. We have prepared some quesadillas with a sautéed vegetable and the others with avocado and a touch of lime and cilantro .

Quesadillas are perfect for snacking with friends or for those days when you don’t feel like cooking too much. We can use just one tortilla and fold it over itself or use 2 tortillas, one as a base, the filling in the middle and another tortilla on top, which we can then cut into pieces to make it more convenient to share. In that case they are usually called synchronized.

Let yourself be carried away by Mexican cuisine and go ahead this weekend to prepare a themed lunch or dinner where these quesadillas are the stars along with guacamole , fajitas or nachos . I assure you that you will not regret it.

Preparation of chicken, avocado and vegetables. The filling of the quesadillas

  1. We prepare the chicken at the same time, for both types of quesadillas. We cut it into small pieces. We put oil in a frying pan over medium heat and add the chicken. Season with salt and pepper, add a few drops of Tabasco to taste and mix well. Cook for a few minutes until the chicken is golden. We reserve.
  2. For the chicken and vegetable quesadillas , wash and cut the pepper into small pieces. We peel and chop the onions.
  3. Pour oil into a frying pan over medium heat and sauté the onion. Sauté for 5 minutes and add the pepper. Season with salt and pepper and sauté for 10-12 more minutes. Add the corn, mix, cook for 2 more minutes and turn off the heat. We reserve.
  4. For the chicken and avocado quesadillas , we cut the avocados in half and empty them with a spoon. Chop the cilantro leaves and mash the avocado with a fork. We mix both ingredients. Add the lime juice and mix again. We reserve.

Preparation and presentation of the quesadillas

  1. First we assemble the avocado quesadillas using half of the chicken. We can make them in the oven or in a pan. No oil is needed in either case. If we opt for the pan, we put a tortilla in it over medium heat and cover it with a layer of crushed avocado.
  2. On top of the avocado we add a little corn and then some pieces of chicken. We cover with plenty of cheese. And we cover with another tortilla, pressing lightly with our hands. Brown for a couple of minutes on each side and remove from heat.
  3. We repeat the process with the rest. We move on to assembling the chicken and vegetable quesadillas. We put a tortilla and a layer of sautéed vegetables in the pan.
  4. On top of the sauce we add some pieces of chicken and plenty of grated cheese on top. We cover with another tortilla and press lightly with our hands. Brown for a couple of minutes on each side and remove from heat. We repeat the process with the rest. We cut the quesadillas into 4 pieces and serve.
