For this reason, today we bring you the recipe to make express vegetable broth . Vegetable broth is one of the easiest to prepare. Without having to spend endless hours, we can have a broth with all its flavor in minimal time. 

Preparation of express vegetable broth

  1. We peel the mushrooms, this way we will remove any possible remains of soil that they may have. Another way to clean them would be to wash them under the tap, but this would cause them to become waterlogged. We could also wipe them with a damp cloth if they weren’t too dirty.
  2. We peel the garlic and cut it in half. We peel the onion and cut it into quarters. We peel the carrot and cut it into large pieces. We wash the leek well and cut it into 4 pieces. We wash the tomatoes and cut them into 4 parts.
  3. In a saucepan we heat a splash of extra virgin olive oil. Add the onion, leek and chopped garlic. Sauté the vegetables for 5 minutes over medium-high heat without stopping stirring. We add the mushrooms, carrots and bay leaf. We continue sautéing for 5 more minutes, stirring occasionally. Finally, we add the quartered tomatoes, the parsley and salt.

Cooking and presentation of vegetable broth

  1. We cover the vegetables with water, about 1.5 liters. We cover the casserole and count about 35-40 minutes of cooking from the moment it starts to boil. Once the vegetables are cooked, we strain the cado and we will have it ready to use in the preparation we want.
  2. We can reserve it for future preparations if we store it in glass jars and freeze it or store it in a vacuum.

Tips for a perfect vegetable broth

  • We should not salt the broth excessively, it is preferable to go short. This way we can use it in any other preparation and then salt it appropriately according to the ingredients we use in each case.
  • Although we could use a pressure cooker to prepare it, in reality with a cooking time of 35 – 40 minutes we can achieve great flavor power.
  • The trick is to make a good stir-fry with the vegetables. It is not so much about poaching them as about toasting them to remove all their performance. For this reason we will cook them with a splash of oil, at medium/high temperature. We must be especially careful not to burn the vegetables, so it will be important to pay attention to them and stir the pot almost continuously.
  • This resulting broth, once strained, can be stored in the refrigerator for 3 or 4 days. We can freeze it and even vacuum it in glass jars to have it in the pantry at our disposal.
