Preparation of the hot cross buns dough

  1. We place the flour in a deep container and make a well in the center. We add the sugar, the dry yeast, the raisins, the spice mixture and stir, leaving the raisins in the center and making another hole. Next we heat the milk slightly and mix it with the butter. Add the semi-beaten egg and the previous mixture to the container with the flour mixture.
  2. We stir from the center outwards, incorporating more and more flour so that a kind of porridge forms in the center. We finish by mixing with our hands and kneading for a few minutes on a clean work surface.
  3. When we obtain a homogeneous and smooth dough, we make a ball with it and let it rest inside the container in which we have made the mixture. We don’t need to wash it. We cover it with a clean cloth and wait for it to double in volume. The time will depend on the ambient temperature and can range between one and two hours.

Rising, shaping and baking the hot cross buns

  1. When the dough has doubled in volume, degas it by kneading it lightly on the work surface. We extend it into a cylinder shape and cut four equal parts. Then we divided each room into three pieces. With this we will obtain 12 units , a quantity that we can increase or decrease depending on the size we want our hot cross buns.
  2. We lightly knead each portion of dough and roll it into balls, leaving the folded part at the base. We place all the balls on a baking tray covered with parchment paper or a silpat and make a cross-shaped cut on the surface with a very sharp knife.
  3. We cover the tray with a clean cloth and let it rise again for approximately an hour or until the buns look puffed and spongy.
  4. All that remains is to prepare the mixture with which to draw the crosses and, to do this, we mix the sugar and flour. We add the water little by little, stir and check the thickness before adding more water. We must get a slightly thick dough. We fill a pastry bag with it and fill the crosses that we have previously made with a knife.
  5. Bake the rolls in the oven, preheated to 190º C with heat up and down, for about 18-20 minutes until golden brown. We remove from the oven, brush with the syrup to give a little shine and let it cool before consuming. Will you be able to wait?

  • This is a very easy dough to handle , but it requires patience when waiting for it to rise. It is better to approach the task of preparing Hot Cross Buns without rushing and working in a slightly warm environment so that they rise faster.
