  • 350 g lamb cut into pieces

Chorba frik soup is one of the fundamental dishes of Algerian cuisine . It is a tomato-based soup to which meat, chickpeas and frik are added, which is how green wheat is known in these lands.

It is a hearty soup , designed to satisfy your appetite after fasting for Ramadan, so imagine how rich and nutritious it must be. Of course, it is a traditional recipe that, over time, has changed and each teacher has his or her own booklet. There are those who do not add chickpeas, those who add mint… All depending on how it is made at home. We have tried to get closer to the best-known recipe for this soup, but you can find different variants, all equally delicious.

You already know that we are soup lovers and we are always looking for new recipes with which to surprise us and surprise you. Soups such as kulajda , delicious corn soup or traditional picadillo soup are a regular feature on our weekly menus from October to May (in the summer season there is nothing like a good fresh tomato soup ). But when we tried the traditional Moroccan harira , we were left wanting to investigate more into the flavors of North Africa that we had liked so much, finding this wonderful chorba frik soup that we bring you today.

If, like us, you want to expand your soup catalog a little and try something different, don’t think twice and give chorba frik a chance, because it is delicious.

Preparation of chorba frik

  1. First, we brown the meat in the pot with a splash of olive oil. When they have taken on color, add the garlic, tomatoes, chives and celery to the pot, as well as half of the cilantro and the tomato sauce. We let it all cook for a few minutes and added the chickpeas, sautéing them for 5 minutes.
  2. We add the spices, salt, mint, a bay leaf and 2 liters of water. We bring everything to a boil and lower it to medium heat so that it cooks quietly for an hour. In the process we look at the amount of water in the pot in case it is necessary to add more.
  3. We put the green wheat in the pot when we see that the soup is almost ready and we cook it over low heat for 15 minutes, stirring constantly. We serve it on plates and decorate with a little cilantro on top. Ready to serve.

Tips for a perfect chorba frik

  • We can change the green wheat for soup noodles or rice . The result will be very similar.
  • Not everyone likes cilantro, so we can remove it from the recipe if we don’t feel like it too much and the flavor is almost the same.
  • It is a soup designed to fill the stomach, it will not be necessary for us to make a second dish .
