  • 1 whole chicken, approximately 2 kg
  • 200g. Catalan sausage
  • 200 ml. sweet sherry wine
  • 2 cloves of garlic
  • 2 golden apples
  • 100g. of plums
  • 50g. of pine nuts
  • 1 cinnamon stick
  • Star anise
  • 4 nails
  • Extra virgin olive oil
  • Salt and pepper (to the taste of each house)

How to make chicken stuffed with sausage and apple .

To celebrate Christmas food in style, you don’t have to spend a fortune on ingredients. Simple dishes, like this stuffed chicken, are proof that we can make an incredible recipe with little money and very little effort.

The filling allows for countless versions, but the one we have chosen, with Catalan sausage and apple, is delicious and always turns out well. For the garnish we have used plums and apples in wedges that are delicious after baking. It could also be accompanied with white rice , couscous or quinoa.

Respecting the oven times and turning it as needed at all times is essential so that the chicken is well cooked, golden on the outside and juicy on the inside. The rest of the process has no mystery and the result will be a spectacular dish that the whole family will like. 

Preparation of our chicken filling

  1. Preheat the oven to 200º C with heat up and down.
  2. We crumble the sausage meat, discarding the coating and removing the interior with our hands. We peel the apples. Cut one into wedges and sprinkle a little salt so it doesn’t rust. We cut the other into small pieces for the filling.
  3. We peel and slice the garlic. Pour oil into a frying pan and brown the garlic for a few minutes. Add the crumbled sausage and fry for 5 minutes. Add the chopped apple and sauté for another 5 minutes. Remove from heat, add half of the pine nuts to the sauce and mix.

Baking and final presentation of the chicken stuffed with sausage and apple

  1. We put the chicken in a baking dish and with the help of a spoon we introduce the sausage and apple sauce into the chicken.
  2. We close the rear opening with toothpicks or kitchen twine and tie the chicken thighs and wings with kitchen twine so that it maintains its shape when baking.
  3. We bake for 15 minutes at 200º. After 15 minutes without opening the door, we lower the temperature to 175º and bake for 30 more minutes. We take out of the oven and turn the chicken over. We add the plums, the apple slices, the rest of the pine nuts, the cinnamon, the cloves and the star anise around the chicken.
  4. We pour a splash of olive oil over the chicken, season with salt and pepper to taste and cover it with sherry wine. We bake another 30 minutes.
  5. Remove from the oven and turn the chicken again. We use a spoon to bathe the chicken with the juice it has released. Bake for 10 more minutes and remove from the oven. We remove the thread, the toothpicks and serve hot.

Tips for a perfect chicken stuffed with sausage and apple

  •  If we bathe the chicken with half of the wine and let it marinate while we prepare the sauce, it will be even tastier. We can add the rest of the wine at the indicated time.
