Preparation of brioche French toast

  1. In a saucepan, heat the milk, the cream, the cinnamon stick and the peel of half a lemon and half an orange.
  2. When the milk begins to boil, remove the pot from the heat. We add the sugar and mix it to integrate it. We let the mixture cool before continuing. Once the mixture is warm or almost cold, strain it. Add the beaten eggs and set aside.
  3. We cut the brioche into slices. These will be of a certain thickness, no less than 2 cm. We place the slices on a platter, one next to the other.
  4. We pour the brioche with the mixture that we have reserved, little by little, being careful to cover them all. We will turn the slices over so that they are coated on both sides.
  5. We cover with transparent paper and store in the refrigerator for 2 hours. After this time we will turn the slices again in the liquid that is left over in the source.

Caramelization and sealing of brioche torrijas

  1. In a frying pan we melt a knob of butter with a tablespoon of sugar, when we see that the sugar begins to brown very slightly, we add the torrijas.
  2. Brown them on both sides, cooking them for several minutes on each side. It is important that we do not exceed the temperature of the fire, we could burn the sugar. We remove the torrijas and serve. They would be perfect accompanied by a creamy hazelnut, vanilla or nougat ice cream.
