Ingredients

  • For the volovanes stuffed with curried spinach: 8 mini volovanes
  • 100 g frozen spinach
  • 45 ml olive oil
  • 10 g all-purpose wheat flour
  • 5 g ground curry
  • 50 ml coconut milk
  • a pinch of salt
  • For the puff pastries stuffed with mushrooms and garlic: 1/2 sheet of rectangular puff pastry
  • 10 mushrooms
  • 3 garlic cloves
  • 50 ml liquid cooking cream
  • Freshly ground black pepper
  • Beaten egg for brushing
  • Black sesame seeds to decorate
  • 30 ml olive oil
  • Puff pastry sticks, mustard and Grana Padano: 1/2 sheet of rectangular puff pastry
  • 1 tablespoon Dijon mustard
  • 15 g grated Italian Grana Padano cheese
  • 1 beaten egg
  • Sesame seeds
  • Tomato jam and three cheese tartlets: 1/2 sheet of rectangular puff pastry
  • 1 tablespoon tomato jam
  • 20g feta cheese
  • 20 g goat cheese
  • 20g Cheddar cheese

We are unconditional fans of puff pastry because of the game it offers in the kitchen, the possibilities it offers and its texture and flavor . Those sheets of crispy dough drive us crazy and we love using it for all kinds of recipes, especially to prepare Christmas appetizers .

We have always found that puff pastry provides a touch of class, so when we have a celebration at home, if we want to show off, we get a tray of appetizers with a variety of puff pastry and we look like Kings. This time they are all vegetarian, easy to prepare and very tasty. Perfect to surprise and triumph with all the diners, because they are delicious.

Of course, there are multiple combinations and you can vary the fillings to taste. Below we leave you some suggestions, although these work very well for us. To accompany the puff pastries we are going to take out some bottles of very fresh white wine , a perfect combination for the palate.

Preparation of vegetarian appetizers with puff pastry

Volovanes stuffed with curried spinach

  1. Cook the frozen spinach in a saucepan with a little water. We do it over low heat for the time necessary for them to thaw. We make sure that they do not run out of water so that they do not cling to the bottom.
  2. Drain the spinach well and chop with a knife or scissors. In the same clean and dry saucepan, heat the oil. We add the flour and toast it for a couple of minutes, stirring constantly.
  3. Next we add the ground curry and stir to integrate. We add the spinach along with the coconut milk. Season to taste and cook over low heat for approximately ten minutes.
  4. We fill the volovanes with the spinach, decorate with a little ground almond or another nut to taste and serve immediately.

Puff pastries stuffed with mushrooms and garlic

  1. We clean the mushrooms with a damp cloth to remove any traces of soil they may contain. Finely chop both the feet and the hats.
  2. Peel and finely chop (or grate) the garlic cloves. Heat the oil in a frying pan and sauté the garlic cloves and chopped mushrooms for five minutes.
  3. Next we add the flour and liquid cream and cook for 15 more minutes, over very low heat, stirring occasionally to obtain a homogeneous cream. We let the mushroom cream cool before filling the puff pastry.
  4. We cut the puff pastry into rectangles of about 2 x 3 cm. We place a teaspoon of the farce in the center of half of the rectangles.
  5. We brush the entire contour with beaten egg and place the other halves on top, lightly pressing the edges so that they are well aligned. We cut with a zigzag cutter or pass a fork along the edges so that they are well sealed.
  6. Brush again with beaten egg, sprinkle with black sesame seeds (optional) and cook in the oven, preheated to 200 ºC, for 14 minutes or until golden. We remove from the oven and serve immediately.

Puff pastry sticks, mustard and Grana Padano

  1. We spread the puff pastry and cut it in half to obtain two sheets of equal size and shape. We spread the mustard on one of them and cover it with grated Grana Padano cheese.
  2. We place the other sheet of puff pastry on top and press gently so that they adhere slightly. We cut it into 1 cm wide strips, lengthwise or widthwise, depending on whether you want these sticks to be longer or shorter.
  3. We roll the sticks on themselves, holding them by the ends, and place them on a baking tray covered with greaseproof paper. Brush each stick with beaten egg and sprinkle with sesame seeds.
  4. Bake in the oven, preheated to 200º C, for 14 minutes or until golden. Remove from the oven and serve immediately, although they can also be served cold.

Tomato jam and three cheese tartlets

  1. We spread the puff pastry and cut it with a pastry cutter to about 6 cm in diameter. We will get eight albums. We place four of them on a baking tray, on greaseproof paper, and brush the outline with beaten egg.
  2. We make a hole in the center of the other four discs and place the resulting rings on top of the previous ones. We press gently so that they adhere. Brush the edges again with beaten egg.
  3. Prick the base of each tartlet with a fork and place a teaspoon of tomato jam in the center. We cover with a mixture of the three cheeses (feta, goat cheese and cheddar), previously crumbled, chopped or grated.
  4. Bake in the oven, preheated to 200º C, for 14 minutes or until golden. Remove from the oven and serve immediately, decorating each tartlet with a fresh basil leaf.

Tips for perfect vegetarian puff pastry appetizers

  • Each and every one of these appetizers can be modified and adapted to each person’s taste or to what we have available in the refrigerator.
  • The volovanes can be filled, for example, with ratatouille and quail egg, hummus, asparagus and mayonnaise, salad and much more.
  • The mushrooms can be replaced with any other type of mushroom and brighten the filling with grated carrot, chopped leek or another vegetable that you like. If you don’t have liquid cream, you can use milk or vegetable drink.
  • For the cheese sticks we have used Grana Padano cheese, but they will be just as tasty with a strong Manchego or Galmesano.
  • Using other cheeses is equally applicable to tartlets. Very delicious with blue cheese, if you are lovers of this variety of cheese, and with some chopped walnuts on the surface.
  • It is important that the puff pastry is very cold so that it can be handled more easily. Do not take it out of the refrigerator until you are ready to use it and, above all, never fill it with a hot farce.
  • We can bake all the puff pastries together on the same tray and save time and effort.
  • The volovanes only need one blast of the oven, so we take advantage of the residual heat from baking the rest of the puff pastries and put them in while we plate the others.
